Owner and CEO Kenneth Kristensen was born into the smokehouse industry. In 2004, he took over the Centralrøgeriet smokehouse from his parents. Kenneth had a dream of elevating cold-smoked salmon to a level that would make the best chefs and fishmongers proud to sell it – and that dream is now a reality.

 

Since 2015, Centralrøgeriet has been located in Bjæverskov near Køge in Denmark. Here, many skilled artisans work with salmon from the Nordic region's most sustainable salmon farms.

 

Craftsmanship, salt, smoke and time may be our only ingredients, but they make all the difference.

SCANDINAVIA

Vestfjord Salmon

Iceland

This salmon comes from Arnarlax in Iceland. We believe it is the most sustainable farmed salmon you can get your hands on, and we were the first to use it for cold smoking in Denmark.

Fynbo Salmon

Faroe Islands

Fynbo Salmon is made from salmon from Hiddenfjord in the Faroe Islands. It is an excellent salmon that is filleted immediately after slaughter, before the post-mortem stiffness sets in. This results in a firm and limber cold-smoked salmon with a clean and clear salmon flavour.

Greenland halibut is a special delicacy that we only offer when we can source fish of the right quality. That means that we only use line-caught Greenland halibut from Greenland.

Gravlax
Norway

Classic gravlax from Bomlø in Norway with fennel, dill, salt and sugar. The texture is firm and tender, and you can easily taste the spices without them overpowering the pure flavour of the salmon.

Copenhagen Side

Faroe Islands

Named after the way the salmon is filleted. The two fillets are split down the middle at the backbone, as prescribed by old Copenhagen traditions. This one requires a little more finesse with the chef's knife – but in return, you get a more old-school look to the salmon. 

Hot Smoked Salmon

Norway & Faroe Islands

There's nothing quite like a piece of fresh, hot smoked salmon. We smoke it gently to preserve the juiciness and flavour. Hot smoked salmon is available in different flavours with various spices and herbs.

A great product starts with excellent ingredients. All processes, from receiving the fresh fish to the final product ready for delivery, take place at Centralrøgeriet, so we can ensure that the quality is top notch every time. Our wild-caught fish comes from Nordic waters and our salmon comes from the most sustainable farms in Norway and Iceland without the use of GMO feed and antibiotics.

GOOD QUALITY COMES FROM GOOD

CRAFTSMANSHIP

All processes, from filleting to salting, smoking and packing, are handled in-house to ensure we end up with a final product we can be proud of.

 

The salmon fillets are hung by the tail in our smokers, where we spread smoking dust on the floor and ignite it. We smoke the salmon sides for almost 24 hours until they have the right consistency and flavour.

 

Good old-fashioned craftsmanship takes time,
but we believe it is worth it.

Top quality

We believe that good salmon is also sustainable salmon, which is why we only work with the most sustainable salmon farms in Norway and Iceland.

 

Good cold-smoked salmon should be firm yet still melt in your mouth. This is only achieved when both the salmon and the preparation are perfect. There should be a distinct but not overpowering smoke flavour, so that you can taste the delicate fish.

 

We believe our antibiotic-free cold-smoked salmon lives up to all of this, but you'll have to taste it for yourself and form your own opinion.

Both fishing and farming have a broad impact on the environment in the oceans around us, which is why we have a strong focus on choosing the most sustainable solutions.

 

Our Icelandic salmon from Arnarlax is a perfect example: No antibiotics are used and great efforts are made to keep the environment around the salmon farms healthy and intact. The feed is certified for quality and sustainability and contains a very high proportion of maritime content.

 

We do all of these things – from selecting the salmon to the final packaging – so that the product leaves a good taste in your mouth in more than one sense.

We are very proud to be certified to sell products that are labelled for ASC, MSC and organic.
